The capital city of Himachal Pradesh in India, Shimla has many farms of capsicum. Hence, the Hindi name. Besides this, though not loved by all, this veggie is the most essential whenever you plan to dish-up an Indo-Chinese recipe. Stuff them up with cheese, beans, other veggies or meats or just make a simple sabzi, it will surely add that exciting crisp to your creations!

Ingredients for Chutta Perisa Maligai Recipe

  • Red capsicums 2

  • Yellow capsicums 2

  • Green capsicums 2

  • Onions 2 medium

  • Garlic 2 cloves

  • Tomatoes 2

  • Ghee 2 tablespoons

  • Mustard seeds 1 teaspoon

  • Green cardamoms 2

  • Red chilli powder 1/2 teaspoon

  • Turmeric powder 1/4 teaspoon

  • Salt to taste

  • Sugar 2 tablespoons


Step 1

Char the skins of the capsicums in the oven or by holding it over the gas flame with the help of a fork till the skin scorches and blisters.

Step 2

Leave them aside to cool and then remove the skin, stalk and the seeds. Peel and chop the onion. Peel and crush the garlic cloves. Wash and chop the tomatoes.

Step 3

Heat ghee in a pan and add mustard seeds and cardamoms. When the mustard seeds start to crackle add the onion and garlic. Sauté till the time the onions are light golden in colour.

Step 4

Add red chilli powder, turmeric powder and sauté for a minute. Add the chopped tomatoes, salt and sugar. Finally add the capsicum and fry few minutes, stirring occasionally Cover and cook for further three to five minutes.
