Ingredients list for Hara Masale ka Bhuna Paneer

  • 275 grams Paneer
  • 1 tablespoon Mint Leaves
  • 1 tablespoon Coriander paste
  • 2 tablespoons Spinach leaf paste blanched
  • 2 tablespoons Oil
  • 1/2 teaspoon Mustard seeds
  • 7-8 Curry leaves chopped
  • 3 tablespoons Gram flour (besan)
  • 2 tablespoons Hung yogurt
  • to taste Salt
  • 1/2 teaspoon Black salt (kala namak)
  • 1/4 teaspoon Turmeric powder
  • 1 teaspoon Red chilli powder
  • 1 teaspoon Cumin powder
  • 1/2 teaspoon Garam masala powder
  • 1 large Onion cut into 1 cm pieces layers separated
  • 2 medium Green capsicums cut into 1 inch pieces
  • 2 medium Tomatoes seeded and cut into 1 inch pieces
  • 2 teaspoons Lemon juice
  • 2 teaspoons Eggless mayonnaise
  • 2 teaspoons Tomato ketchup
  • a few Red capsicum thin strips
  • a few Yellow capsicum thin strips
  • a few Green capsicum thin strips

Method

  1. Cut cottage cheese into 1 inch cubes. Heat 2 tbsps oil in a non stick pan, add mustard seeds and when they begin to splutter add curry leaves and gram flour and saute for 2 minutes. Transfer this into a bowl.
  2. Add mint leaf paste, coriander leaf paste, spinach paste, hung yogurt, salt, black salt, turmeric powder, red chilli powder, cumin powder and garam masala powder and whisk everything well.
  3. Add cottage cheese pieces, onion pieces, capsicum pieces and tomato pieces and mix well.
  4. Let them marinate for 10-15 minutes. String them on skewers in this fashion: onion, tomato, capsicum, cottage cheese; repeat this order once and end with an onion piece.
  5. Heat the remaining oil in the non stick pan, place the skewers in it and cook, rotating the skewers from time to time for even cooking on all sides.
  6. Take 2 tsps eggless mayonnaise in a small bowl, add 1 tsp water and mix well. Arrange thin strips of red, yellow and green capsicums on one side of a serving plate.
  7. Place the skewers along side. Place the mayonnaise and tomato ketchup in a decorative manner and serve hot.
