Be a kid or a teenage or an adult or an oldie, chicken lovers trend all over the world at all times! One meat that is a favourite of all beyond belief! When cooked, it can be presented in many guises. Sauté it, fry it, toss it, bake it, steam it – eat it the way you want to. Whatever its form may be upon being cooked, its flavour may change but its flesh remains high in protein, low in fat and can be digested easily.

Ingredients for Chicken in Foil Recipe

  • Boneless chicken breasts 2

  • Ginger-garlic paste 1 tablespoon

  • Red chilli powder 1 teaspoon

  • Salt to taste

  • Lemon juice of ¼ lemon

  • Dried red chillies 4

  • Coriander seeds 1 teaspoon

  • Black peppercorns 1 teaspoon

  • Cloves 2

  • Cumin seeds 1 teaspoon

  • Green cardamoms 2

  • Green capsicum 1 medium

  • Onion 1 large

  • Tomato 1 medium

  • Ginger 1 inch

  • Garlic cloves 6-7

  • Oil ½ tablespoon

  • Fresh coriander sprigs 18-20 + for garnishing

  • Garlic chopped 1 tablespoon

  • Lemon slices for garnishing

Method

Step 1

Make slits on the chicken breasts.

Step 2

Put ginger-garlic paste, ½ teaspoon red chilli powder and salt in a bowl. Add lemon juice and mix well. Add chicken breasts, apply marinade all over and within the slits and set aside to marinate for 5 minutes.

Step 3

Heat a non-stick pan.

Step 4

Roughly chop dried red chillies.

Step 5

Add coriander seeds, black peppercorns, cloves, cumin seeds, cardamoms and red chillies to the pan and dry roast on low heat till fragrant.

Step 6

Cut capsicum into thin strips. Thinly slice onion. Seed and cut tomato into thin strips.

Step 7

Put roasted spices in a blender jar. Roughly chop ginger and add along with garlic cloves and a little water and blend into a coarse paste.

Step 8

Apply this paste evenly over the marinating chicken breasts. Adjust salt if required and set aside for 10 minutes.

Step 9

Preheat oven at 180°C.

Step 10

Heat oil in a non-stick pan.

Step 11

Roughly chop coriander sprigs.

Step 12

Add garlic to the oil and sauté for 10-15 seconds.

Step 13

Add onion, toss and sauté till they turn translucent. Add capsicum and toss. Add tomato, toss and sauté.

Step 14

Add salt, remaining red chilli powder, toss to mix and sauté for a minute. Switch off heat and add coriander leaves and mix well.

Step 15

Spread an aluminium foil on a worktop. Place marinated chicken breast and top with half the sautéed vegetables. Wrap to seal from all sides. Similarly wrap the other chicken breast.

Step 16

Place wrapped chicken on a baking tray, place tray in preheated oven and bake for 15-20 minutes or till the chicken is fully cooked.

Step 17

Serve hot garnished with coriander sprigs and lemon slices.
